Goldy’s Enchilada Chicken Suiza

I grew up eating this dish.  Not at home.  At my buddy Mickey’s house.  His dad survived the holocaust.  His mom, Goldy, was also of European descent, but grew up in Mexico City as her parents fled Europe before falling victim to history.  Mickey’s mom was a really good cook.  The dish I remember vividly was her enchiladas chicken suiza.  Our recipe is very much like Goldy’s.  Every time I eat it, I’m flooded with fond childhood memories.

Our’s is assembled similar to Goldy’s original recipe. We use sautéd,  shredded white meat chicken, our suiza sauce, handmade corn tortillas, and top it with cotija cheese.  Pico de gallo, spanish rice, and black beans are served on the side (just like Goldy did).  If you want to to try our recipe at home, email me and I’ll send it to you (dave@kayndaves.com).
